Why use Bio Agar?

Bio Agar is used as a gelling agent for the production of jellies, jams, fruit cakes, candies. You can also use it to thicken. It has the ability to retain water and form a stable gel structure, so it is much stronger than gelatin and holds its shape perfectly when sliced. It is made from red seaweed.

It is very easy to work with. Just bring it to the boil to gel it. You can leave it to gel in any liquid. It does not need a refrigerator to solidify, as it occurs in a short time at 35-40 °C. The time required for solidification is much shorter than for gelatine. It allows the formation of high layers of jelly.

It has no taste, no odour and is calorie-free.

Bio Agar is preferred over traditional agar powder because of its organic origin, which means it has not been produced using chemically treated raw materials or pesticides. Great for those who prefer natural and BIO ingredients.

What is BIO Agar?

Agar is a natural polysaccharide with a high gelling ability, it is produced from red seaweeds (Rhodophyceae). The gelatin is very firm from them. It contains many minerals such as iodine, calcium and iron.

Stability at higher temperatures: Agar gelatin is stable even at higher temperatures, you will appreciate this especially in the summer months at high temperatures. (The gelatin on the cake remains the same even at higher temperatures.)

Fast setting of the gelatine: Agar gels and hardens faster than regular animal gelatin, which means your food will cook faster and be firmer. This is important when making desserts, jellies, cakes, tarts, aspics and similar goodies that you don’t want to wait a long time for. It does not need a refrigerator to set, as it occurs at 35-40 °C.

Easy to handle: agar dissolves in the water during cooking and does not tend to change without the need for further manipulation. The agar can be reheated and reused after solidification.

Preparation

How to use?

  1. Mix BIO Agar (10 g) in 1 litre of cold water and sweeten as needed.
  2. Cook, stirring constantly, for 3 minutes.
  3. Allow to cool slightly after cooking.
  4. Pour into the mould and leave to set in the fridge.

You can also prepare organic agar from fruit juice, juice, etc.

If you want to achieve a clear and transparent jelly colour, you can add a little lemon or lime juice to the agar gel. This simple adjustment will help you get a transparent texture.
