  1. For the preparation of 500 ml mass.
  2. Stir the gelatine into half of the cold liquid (250 ml) and let it swell for 10 minutes.
  3. Boil the remaining liquid (250 ml) and stir it into the swollen gelatine and process according to the recipe.

A simple rule for beginners is: just don’t cook it! Otherwise, the gelatine will never solidify. Gelatine is sensitive to high temperatures and must therefore not be cooked during preparation. Cooking it would denature it, which means that its structure would change and it would lose its gelling properties.
